"Sweating" is bullshit. Cook all your veggies on high. 5 minutes for onions. 1 minute for garlic. 10 minutes for mushroooms. Etc. Doesn't matter if it's oil or boiling water.

And this fascist sentiment about separate pots. Except for things that don't mix with water (onions, garlic,) you can do all at once.
